Mission Statement

Sul Ross Meat Lab & Market provides a hands-on state inspected space for students to learn meat processing,

best practices for food safety, and butcher retail; supports faculty research; and creates a wholesome food for our local community

and the Big Bend region of Texas.
 

 

 

Come see us for Beef, Pork, Lamb, and Goat cuts of meat. We also make smoked and fresh sausage products in house!

Thursdays and Fridays: 9:00am-6:30pm

 

 

HOWDY! LOBOS 

We are still following CDC safety guidelines for COVID-19 however, the market retail area will allow 2-3 people inside at one time. Mask will still be mandatory and we reserve the right to refuse service to anyone who does not follow our request. Meat order pick up will be available Mon-Fri 9:00-5:00pm, please email (meatlab@sulross.edu) with the specific meat cuts and pickup time.

We are currently only taking credit card or checks as payment.

Come see us at the Alpine Farmers Market Saturdays from 9:00 AM to NOON. We can take checks and cash as payment at the market.
